Doon BallybunionThis story was told to me by my father James Walshe - StampyStampy was made on Michaelmas night. It used to made when the people were diging the potatoes. Sampy was made from raw potatoes grated fine and the water squeezed out of them then the water was put aside and strained four or five times then it is used for starch.Then the potatoes were grated fine and mixed with flour and sour milk and salt and a grain of bread soda. Then it was baked in a griddle.Brendan Walshe
