  1. The ingredients used in boxty-bread are raw potatoes and boiled potatoes, salt, and a little flour. First they were boiled in a pot and then they were peeled and mashed. Then the raw potatoes were peeled and grated in a basin with a grater. Then they were squeezed in a boxty-bag and the water all taken from them. They were then mixed with the mashed ones and kneaded to a dough. The salt was added in the kneading and also the flour. It was then flattened out in cakes about half inch thick and baked in a greased oven. Potato-cake was made with boiled potatoes peeled and mashed some salt and flour and carrawayseed was then added. It to was mixed to a dough and flattened into cakes of the same thickness. Then
