2. Churning

   This is how my mother makes butter:- First of all, she puts the new milk in pans to set. It is left this way for twenty-four hours. By this time, the cream will have risen to the top of the milk. The cream is then put into an earthenware crock in order to let it thicken. Usually the cream is left four days in the crock.

   Before she starts churning, she makes the sign of the cross on the cream with a grain of salt.
