Every country woman chooses the best hen or young cock and kills it.
At every door of the house the blood is sprinkled and two crosses are made on each door in honour of St. Martin.
St. Martin died a martyr in Tours.
Early in the year every farmer marks the best lamb in the fold to be killed.
It is killed on the Sunday before St. Martin's day.
It is a custom that every country house which keeps a horse on the farm should produce two killed fowl.
