This bread was made from the same ingredients as boxty bread was made from. But when the cake was baked it was put against an iron bar in front of the fire and it was left there for five hours. Then it was taken away and left in a cool place until it was cool and then it was ready to eat.
Potato cake.
This cake was baked on a griddle. First of all the potatoes were boiled. When they were boiled they were taken out of the pot and were peeled. Then flour was put into a basin and the potatoes were grated in on top of the flour. Then salt was put in on top of that. Those ingredients were mixed together. Then the mixture was wet with potato juice. It was rolled out and cut into small scones and put in the griddle which was on the fire heating.
