  1. Long ago the people used nothing only dash churns but now-a-days they all use barrel churns.
    After milking the cows the farmers separate the milk from the cream with separators and then they churn the cream. If anyone came into some peoples houses when they were churning they would ask you to take a brash because if you did not they say that the butter would go off the churn.
    When the butter is taken off the churn it is put into a wooden dish full of cold water and washed three or four times to get all the milk out of it.
    Some of the poor people churned as much butter as they needed in a bottle. The people had to go on carts to the markets to sell their butter.
    It is very hard to make the butter in the Winter. the people make cakes out of the butter-milk and the also give it to the pigs.
    Nowadays the people have thermometers to find the temperture of the cream for churning point.
