The griddle cake is made like ordinary bread only it is baked on top of the fire on a iron stand. - The ancient Irish had to grind their own corn and make their own bread as they were not supplied with bread from the bakers as we are now. The bread was very good and wholesome. They made different kinds namely:-oaten, Indian meal, bran, boxty, levened bread, and potato-cakes.
The oaten bread was made by mixing oaten meal and salt and wetting it with water.
