It was put into firkins, and brought into the market to be sold, and a quantity of it was kept at home for the uses of the house.

We have not a churn at home but there are two in my aunts house. One is a churn barrel, and the other a churn staff.
The churn barrel was worked by twisting the handles which were on each end of it.
In the churn staff there was a churn dash which was worked upward and downward. A man used to do the churning while the mistress of the house timed it.
When the cream would break a drop of water would be put into it.
It took about half an hour to make the butter. If any stranger or traveller happened to come in for alms, he would have a hand in beating the cream.
