This old custom is still carried out of making pan-cakes on Shrove Tuesday. Long ago they made cakes which they called cream cakes. They put cream, flour, sugar and salt in these cakes. Then they poured the batter on a griddle and cooked it over a fire of wheaten-straw. These were supposed to taste sweet, even sweeter than the ones that are made nowadays.
On Shrove tuesday night they used to eat what they called late supper. This meal consisted of meat, potatoes and cabbage. This was done so that they would be able to bear the black fast on Ash Wednesday better, as they would not use butter, eggs, milk or bread made with milk from that day until Easter.
