- (ar lean ón leathanach roimhe)The potatoes then are piled into the pit to a height of about two feet and then covered with straw first and then with clay.
This clay is packed firmly around the potatoes with spades or shovels and made from an angle like the top of a house.
The seeds of potatoes used around here are Kerr's Pink, Irish Queen or Champions. They also use Aran Banner or British Queen.
About 80 years ago starch was made of the potatoes. Only rarely was it used. It would be made in the Summer months to starch the fronts and collars of the shirts worn by men.
The portion of the shirt not starched, that is the sleeves, back and lower front were made of a stuff called Baffety.- Bailitheoir
