- Long ago there was no starch like there is now. In those days, it was got from potatoes.
The people used to first grate the potatoes and then squeeze them, and the water they would get out of them, they would leave it in a wooden dish, for three days to settle; then they would drain the water off it, and the starch would be found in the bottom of the dish. It was then left to dry, and whenever people needed to starch their clothes, they used to boil it.
