Potatoes were the only food they had and they would have them for every meal in the day and "boxty cake" was also made of them, the potatoes and made of very fine and mixed with flour and baked.
Starch was also made of them and there was no other starch at that time and the men's collars and shirts were starched with it, and it gave a lovely gloss, or shine when ironed.
