    Churning.
    The churn which I saw used for butter making was installed in a dairy.
    It was ro round in shape and was worked by what is called a gear. This gear was attached to the churn and came out through the wall of the dairy on to a round affair which was drawn round and round by a horse. The horse had to be trained to go slowly as the quality of the butter depended on the way of the horse
