  1. Churning is done in every house in the village of Tavanagh, Parish of Straide, and Barony of Gallen. The churn we have at home is two feet high and its diameter is one foot and a half. The milk is worked up and down by a dash. Before the milk is put into the churn, the churn is heated and left out to air. Then the sour milk is put into it and it is dashed up and down with
