  1. Wheat straw is used for thatching. Scallops are gathered some time before and so they are seasoned and easy to bend. A large knife is used to dress the straw after it is put on. A stick with a point on it is used for making holes for the scallops to stick them in the thatch. Salt is sprinkled on the thatch to keep the wild birds from tearing it.
