  1. Long ago the bread that was made in this district was potato cake, boxty-bread, staupy[?] oatmeal bread + also Indian meal break and wheaten bread.
    Boxty bread was made by grating[?] the potatoes and straining the starch and liquid out of them. The substance was then put on a "lossett" and kneaded. Wheaten flour was then added to this mixture.
    Brown bread was also made by grinding the wheat between two querns. These querns were two round stones with a hole in the centre. A stick was placed on the ground and the querns were so arranged that one of the stones was continually revolving on top of the other. The wheat was placed between the stones + in this way it was ground.
    The people would often grind enough wheat for a week. At other times they would have to rise early in the morning and grind the food for their breakfast.
    Some people would bake the bread on salt slates on iron called a griddle. Other people would cook the bread by having it supported by square stones, thus the bread would be in a slanting position.
