  1. Boxty Making
    Choose some nice potatoes wash well and peel them. Now grate and wring them in a fine cloth. Mash some boiled potatoes, add flour and mix the whole well together and make into small cakes Boil briskly till cooked. Some people prefer pancake boxty. This cake is made very thin and baked on a well greased frying pan. Another method is to make the whole mixture into one large cake and bake in an oven. When it is cold it is cut into slices and fried on a pan.
