    Churning
Water is poured on it a great many times until the water runs off it clear. Salt is put on it then.
    Alice St. Leger, Coolroe, Tinahely

  2. Long ago a person who went into a house to borrow something at churning time would not get it for the people would say they would take the profit also.
The churning generally lasted half an hour but some people churned all day and still there was not any butter on the milk; they would say then that the profit was taken.
    Bridget Murphy, Ballykelly, Shillelagh
