    Boxty Bread
    Boxty break used to be made around here about fifty or sixty years ago. It was made in the following way. Potatoes were washed and peeled. They were then grated finely. About the same quantity of potatoes were boiled, peeled and mashed. The grated raw potatoes were added to the mashed boiled ones. Flour was added and kneaded with potatoes also a little milk. Salt was also added to flavour the bread. The mixture was then flattered out and made into cakes which were baked on griddle.
