- 1. Keough's on the Quay
This "Cellar" was situated on the Quay where [crossed out] and up Marsh Lane, South side. There were two entrances one on the Quay the other in Marsh Lane.
Keough's bacon won medals all the world over (?) the old people used to say. The flavour was most delicious. A large export trade was done to all parts of the world.
It employed over 200 men. It was supervised by Mr. Keough himself. It flourished during many generations of Keough - the last being Mr. Sammy Keough who died comparatively young 50 yrs. ago. The Keough residence is that now occupied by each successive Sub-Manager of the Bank of Ireland, right next the Bank.
2. Rice's Irishtown
This was a small "Cellar" carried on by the Rice family in Irishtown in the premises now occupied by Mr. J. Maher. As a child, I, myself, saw all the disused machinery at Rices.1. Keough's Cellar sold
After the death of Mr. Sammy Keough the Cellar was bought by a New Ross Co. who ran it for a few years on a decadent scale. It was not a success and shareholder after shareholder withdrew their shares till finally it was left 'a wreck' on the hands of Mr. David Murphy a leading draper carrying on business in Quay St. It was said he lost a lot of money by it.
Smith plies his brawny arm in part of it now.
