- We have a churn at home It is a dash churn It is three feet high and the sides are round It is about ten years since it was new The churn is made with oak staves and kept in place with iron hoops There is a lid and dash and clabeen to keep the cream from splashing out In Winter we churn once a week in Summer every second day. In warm weather milk ripens quickly My mother churns strangers who come in while the churning is being done are expected to put their hand to the dash before they go It is a belief that no butter would come on the milk if they did not It takes an hour to churn two crocks of milk The churning is done y hand You lift the dash up and down through the cream(continues on next page)
