In our old house there is a quarter of a beast hanging in the chimney and it must be there for over a hundred years. The soot and the smoke have kept it from rotting.
Long ago a disease called Blackquarter caused great losses to farmers by killing off great numbers of the cattle especially the fat cattle.
The owners were advised by "knowledgable" people to cut up a beast that died of the disease and hang a quarter of it in the chimney to prevent the disease from spreading.
