  1. "Local Churning"
    Farming is the most important industry carried on in Ireland. The majority of people are engaged in farming in it. It is certainly a healthy and varied life.
    Nowadays, too, the people have become more advanced in the performance of all farm duties. The work is now a pleasure. The dairy is the cleanest house on the farm. It must be kept clean and airy to produce nice sweet butter. Here the separator and all the milk utensils are found.
    The 'end over end' churn holds holds an important place in the dairy. In summer time, it is in use twice a week, to get the butter from the cream, which has been collected previous to churning day. When the cream is ripe, it is put into the churn and churned until the cream has given its place to grains of butter, similar in size to the wheat grain. The milk left is buttermilk, and it is a delightful drink. Besides satisfying our
