- We grate about three raw potatoes, about two cups of flour, and teaspoonful of baking soda - and salt to taste.
Then we mix to a batter with new milk until it falls off the spoon. We turn into a greased pan & bake until set. Then turn on other side.

- Grate potatoes and mix them with flour and salt. If they need wetting - wet them with a drop of new milk. Then roll out the dough and cut it in slices, and fry until its a nice crisp brown, then serve with butter.
- The way in which my granny makes Griddle Cake is :- She mixes flour,a grain of salt, and soda together. Then she wets these with buttermilk, and makes it into a dough which has to be kneaded. A cross is not put on top of it.
The cross is put on the cake in order to help it to rise, and when a cake that is made in a baker(continues on next page)
