    They talk about dishes for dinner of mutton of beef and of ham,
    Of geese and of turkeys for Christmas. In Sprinttime the choicest of lamb
    Such fare may be nice and nutritious for all sure I'd rather instead
    That ould fashioned dish of my hearts highest wish
    A nice bit of Irish pigs head

    Its the dish of our fore fathers table, when each one was snug and content
    And when came the call of the land-lord, Twas the pig often times paid the rent
    And still tis the dish of our people, for nought can against it be said,
    Tis tender tis tough tis the right kind of stuff,
    A nice bit of Irish pigs head.
