- The Churning that is done nowadays is done by hand with a dash and while doing so it is moved up and down. The Churns that are rolled from side to side are called barrel churns and some of them are worked by the foot. When the water is poured into the churn, in a few minutes little pieces of butter appear over the lid of the churn. Then a handful of salt is put in on it. And in a half and hour it is Churned. Then the butter dish and straner is scalded and then the butter is lifted off and washed and salted and made into a brick by the butter boards.
The people long ago had pisreogs and they believed they could gather peoples milk and butter and when the people would churn they would not have one(continues on next page)- Collector
