    Irish pig’s-head
    They talk about dishes for dinner,
    Of Mutton, of beef, and of ham.
    Of turkeys, and geese for Christmas
    And in spring-time the choicest of lamb.
    Now such may be grand and nutritious,
    For all that, Id rather instead
    The old-fashioned dish,
    My heart’s highest wish
    A nice piece of Irish pig’s head.
    Twas the pride of our forefathers; table,
    When each one was snug and content,
    And when came the call of the landlord
    Twas the pig, often, times, paid the rent.
    But still, tis the pride of our people
    For naught can against it be
    ‘Tis tender ‘tis tough, ‘tis the right kind of stuff
    A nice piece of Irish pig’s head.
