  1. Boxty was another kind of bread the people used long ago. They peeled some raw potatoes. Then they grated them, and put the grated mass into a piece of cloth and squeezed the water out of it. A little flour, a pinch of salt and a small quantity of cooked potatoes were mixed with the grated potatoes and formed into a cake.
    The cake was left on a pan without a lid turned occasionally until it was baked.
    The water which was squeezed out of the grated potatoes was left to settle in a basin for a while, then the clear water
