    The cup is in top of the lid to help to prevent the cream from splashing out. Butter is made by pulling the staff up and down. It is often given a twist hither and [?]. When the cream is breaking a pint of water is poured in to wash down the cream and to help to gather the butter.When the butter is gathered into a lump it is taken up. The butter-milk is kept for drinking and for making bread. The butter is washed and salted and put into a firkin for market.
