  1. When the butter is ready to be lifted off the milk some people get a small kind of strainer and then they get a mether.
    First of all you lift the butter out with the strainer and then you put it into the mether.
    When the butter is all lifted into the mether you get some water and give it a good washing.
    Then you put some salt in it and hair it. Then you wash it again.
    When the butter is washed you weigh it and put it into what ever size you like.
    In the summer you have to put the butter is spring water to keep it hard.
    Some people make goats butter and it is very white.
    Some people make butter and it is scalded and the reason for this is that there is too much hot water put into the milk.
    The proper colour for butter is yellow or golden.
