  1. How to make Boxty Bread.
    Pick a dozen of large potatoes, wash them clean and peel off their jackets.
    Then get a sheet of tin twelve inches each way and cover the surface with small holes and this is called the grater.
    On the rough side of the grater the potatoes are rubbed one by one down into a dish.
    Then put the contents into a thin cloth and wring out the juice of it and the portion for boxty still remains in the cloth.
    Then put the portion which remains in the cloth into a dish and mix it well with a pinch of salt and a few boiled potatoes.
    Roll it out to a inch thick on the cloth from which the juice was run and put it on a hot pan or griddle.
