The potatoes were washed and peeled. Then they were grated into a basin. A piece of flour bag was got and the grated potatoes were wrung in it until they were quite dry. They were then put into a basin and mixed with flour. A pinch of salt was added. A little sweet milk might be added if it was too dry. Then it was rolled out on the table and favels were made. The pan was put on the fire and it was well greased with butter, the favels were put on it and when one side was hard they turned it. It was usually eaten with milk.
- The Rev. Chapman's wife was the first person know to get fine salt in this district.Mrs Morrow says that between 50 and 60 years ago the people didn't know anything about milk foods such as tapioca etc. It seems that a girl from Lettermacaward district was away as a maid somewhere. She happened to be home on holidays and was in Lanty Hanlon's(continues on next page)
