- Foods that are not now in use generally but which are made on special occasions such as Halloweve, Christmas - are Boxty Bread, Sowens, Bloodpuddings - Horehound tea.
Boxty Bread.
Boxty is yet made in the homes of the farmers. It is made by grating the raw potatoes (largest ones) in a basin or dish on an oval shaped piece of tin. A clean linen cloth is then used to squeeze and extract all the liquid from the pulp. It is then mixed by hand and a little flour and salt added. Often a boiled potato is added. It is then cooked on a pan or oven with plenty of butter lard or dripping. - Sowens.
Sowens was made from the very fine dust that was through oatmeal seeds. The old women sifted the seeds a second time placed this fine stuff in a basin of water and left it there for a few days. Then when boiled and cooled it resembled a thick jelly which was good for(continues on next page)- Collector
