  1. Sowens is a dish which is made from the seeds that we get from the mill with oaten meal. It is a palatable dish. It is made in the winter when the seeds come from the mill.
We steep the seeds with a little oaten meal in water. They are left there for three or four days. The seeds expand and they become sour. Then the seeds are strained and a liquid is left. This liquid is put into a pot and and a little pinch of salt is put on it. Then it is put on a bright fire and it is left there for forty five minutes.
At the end of this time it is lifted out and put into a dish. Then it is left to cool. Then it is eaten with new milk and it makes a very nice dish.
