  1. Potato cakes are used in this district as well as boxty. When making a potato cake we would not want a scraper. When making some we get a basin of boiled potatoes, we pell them. We bruize them together.
    When they are well bruised we put salt and some flour on them. Then we bruise them together again, we make them into the form of a cake. Then we make four quarters of the cake. We put butter on the pan and when
