  1. My father starts digging the potatoes in this month of July. They can be dug with a graip a lais or a sparrow. a good man needs two pickers when he is digging one picking the big potatoes and another picking the small potatoes or poreens. As the boys pick the potatoes they put them into a lot of bags. The new potatoes are very soft at first and there is a claimer called sally made from them. The potatoes are pounded and mixed with salt and onions.
